Beautiful Balsamic Beets

I picked up my first CSA box this Thursday and guess what it had in it.... You got it! Beets! The thing is, I've never cooked beets before. Does that surprise you, seeing I am a novice disaster of a cook? Beets seem to me a little on the exotic side, a little daring and adventurous. And there they were, staring up at me from the CSA box... challenge on, mother-grabbers! Don't get me wrong...being a true blue Aussie, I've eaten them. On my hamburgers, that is... and the beets I'm talking about are the tinned, pickled ones that every Australian has grown up on... but there has never been a fresh beet in my house, as a child OR as an adult, until NOW! That's a lot of years without a real beet around.

Peanut Butter, Maple and Strawberry Slice

I want a healthy snack. This slice definitely is healthy. Not sweetened with sugar, it is sweetened with maple syrup and fruit only. In a word, delicious. To me. My husband didn't care for it. My son wouldn't touch it, my daughter wanted seconds. The slice needs to be cooled for a considerable time before you can cut into it. I popped it in the fridge towards the end of cooling, as I was getting inpatient. Ours came out pretty crumbly and required a fork. The girls in the family didn't mind that. I threw a little pineapple into the strawberry mixture, too, and some mint from our garden. What's wrong with the boys in this family? This slice is a keeper!

Imitation is the highest form of compliment. And I'm clearly not alone in copying the master food blogger at Pinch of Yum . H ere , here and here are some other of the exact same recipes. But how can we resist? Quite possibly a perfect combination of decadence in sweetness; cookies softly baked with gooey brownie?
