optiva Lean and Green: Zucchini lasagna



2-3 large zucchini - 1/4 inch sliced in a mandolin

1 lb ground beef

3 oz cream cheese

spices for beef: garlic salt, oregano, basil

2 tomatoes, sliced

1 cup mozzarella cheese

home made pesto 


1) Heat oven to 425 degrees

2) Salt the zucchini to pull out the water - let stand for 20- 30 mins, and then dab dry with a paper towel

3) brown the meat, add the cream cheese and spices to the pan

4) spray the bottom of the pan - then layer, starting with the zucchini

5) add layer of beef, then top with tomato and pesto

6) another layer of zucchini, beef, tomato, pesto

7) End with a layer of zucchini and then cover with the cheese (I did use a little of Italian cheese too for a little more flavor) 

8) Cook for 30 minutes or until the cheese is golden brown

9) Slice into 4 - this is one serving of Optima Lean and Green
