Imitation is the highest form of compliment. And I'm clearly not alone in copying the master food blogger at Pinch of Yum. Here, here and here are some other of the exact same recipes. But how can we resist? Quite possibly a perfect combination of decadence in sweetness; cookies softly baked with gooey brownie? For me, it was totally irresistible, and my family appreciated my lack of self control.
So, enjoy these. We certainly did. Thanks Lindsay!
Cookie Brownies
recipe created by the ever amazing Lindsay at Pinch of Yum
Ingredients
- 1 stick salted butter, soft
- 3/4 cup white sugar
- 2 tablespoons brown sugar, packed
- 1 egg
- 1/2 teaspoon of vanilla essence
- 1 1/4 cup of flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- brownie mix - with whatever ingredients the mix requires
Directions
- Preheat oven to 350 degrees F.
- Cream butter and sugars in a bowl. Eat a little of this mixture. It is pure bliss. :)
- Once creamed, add vanilla and egg, cream again until smooth. If you don't mind eating raw egg (don't sue me if you get sick) have a taste of this too. Yum! This is most of the reason I bake... to taste the raw ingredients together...
- Prepare brownie batter as the packet directs. Once in baking dish, plop pieces of the cookie dough over the brownies.
- Bake for 35-45 minutes. Check out Lindsay's instructions for the foil directions. Basically, I did 12 minutes without foil, 15 minutes with foil, and another 10 minutes without. And this was the result
Thank you so much for including me in this list, Angie. It's so nice to meet you!
