Baked Plums with Thyme and Brown Sugar


Ever since I ate baked plums at my sister-in-laws grandmothers house, about 18 years ago, I've been wanting to recreate the recipe.  And here is a close match.  So, so, so, easy, and so, so, so delicious!



Ingredients:

Plums, best if a little unripe, cut in half, remove the seeds - as many as will fit in your baking dish

Herbs from your garden (thyme, rosemary)

1/4 cup brown sugar

1/2 cup of water

Pinch of salt


Directions:

1) Preheat oven to 400 degrees

2) Throw a bunch of herbs (thyme, rosemary) on the bottom of a baking dish

3) Place the plums on top of the herbs, and sprinkle the brown sugar on top

4) Throw in the water around the plums

5) Cook (covered, probably best with aluminium foil - I learned the hard way, they are not soft enough otherwise) for 15 minutes.  

6) Enjoy - tastes best served with vanilla icecream.
