Roasted Radishes


Radishes? Do you like them?  Me, not so much, but here is an attempt at a roasted radish to see if I can be converted.


Well, roasted vegetables, with radishes.  I've read that roasting a radish is like roasting an onion... it calms the spiciness and meanness out of the little devils... 

Tangent: Let me tell you...  the trouble with organic vegetables... they have bugs in them... at least these radishes did.  


There were not 217 caterpillars in my radishes, but at least one or two in about 6 of them.  I ended up tossing about half of them (into the compost... is this going to contamiate my compost, with little radish caterpillars crawling about in it??)  I thought it was funny when Bev told her story about caterpillars, but I didn't want to recreate the same hilarity the very next day after I read her blog.  Wasn't so funny in my kitchen.  

Uh uh, no thanks, not for me.  I'm more of a bug free kind of food girl.  See-ya-later-caterpillar!

And the verdict on the roasted radish experiment?  


True, they are sweeter when roasted, but to be honest, if I see another bunch of radishes in my CSA box, I'll be passing them onto someone who actually likes them.  Maybe the caterpillars threw me off, who can say, but nahhh, still don't really like them.  

I'm including this recipe, because if you DO like radishes, I'm sure you would like them even more roasted!  

Roasted Radishes

Ingredients
Vegetables of your choice, but include some radish 
Pinch of salt
Drizzle of olive oil
Minced garlic cloves

Directions
1) Preheat oven to 350 degrees F
2) Cut up veggies, and quarter or half the radishes. 
3) Mince some garlic over the vegetables
4) Cook for about 40 minutes, tossing every 15 minutes or so

ENJOY (more than me... the rest of the veggies were delicious!)
