Vanilla Balsamic Pears


These pears are unbelievably delicious and unbelievably easy to cook.  I've been waiting since last pear season for pears to return, dreaming of vanilla pear sweetness.  YUM!




Vanilla Balsamic Pears
Adapted From Moosewood Cookbooks and Smitten Kitchen



Ingredients:
1/4 cup sugar
1/2 vanilla bean
5 pears of your varietal choice, cut in half or quarters and cored. 

2 tablespoons of balsamic vinegar
2 tablespoons lemon juice
1/4 cup water
2 tablespoon unsalted butter


Directions:



1) Preheat oven to 375°F. 

2) Cut open the vanilla bean by slicing it in half, and scrape out the 1,000,000 little beans into a bowl with the sugar and mix. 

3)  Place the pears in a baking dish.  Top with mixed balsamic and lemon juice.  Sprinkle with vanilla sugar.  

4) Pour the water into the dish and toss a blob of butter on each pear slice. 

5) Roast for 30 minutes, turn at 30 minutes and keep roasting until tender, about another 10-15 minutes.
